Potatoes in Uniform

A simple, cheap, and nutritious meal.

Select from one to four potatoes per helping, according to the size of the potatoes and the appetite of the diners.

Scrub the potatoes, gouge out the eyes, and surgically remove any damaged parts. Slice each potato in two, puncture several times with a sharp fork, and place open side up on the grill of a toaster oven or on a high open shelf of a full-size oven. Cook at 450°F (225°C) for 45 - 60 minutes, according to taste.

When done, cut grooves in the top of each half. Pour extra virgin olive oil into the grooves. Add pepper or dill weed as desired.
